So, after trying everyone's methods for not crashing the bike in Ostrich, I messed around a bit and came up with one slightly different that works for me.
It starts off the way Trogdor says to do it. You fire one shot over the enemy that spawns before the troublesome ramp. But then what I do next is slightly different.
You hold off until the last possible second, then mash two shots out to knock the ramp down. Then, as you fly off the edge of the ramp, fire the three shots for the next ramp. Works every time, provided you do it correctly.
Now, this method may or may not work for you. It's worth noting that I play on emulator (SNES9x v 1.53), so the timing may be different on your platform of choice. When I switch to console eventually, I'll likely have to make adjustments. But hopefully this helps anyone who was having the issue I was!
