The clip: Hold target+hookshot+down-right, then switch to right then release hookshot. Takes some practice but you can get it to where you can get it within a few tries.

Video shows two setups afterwards for the hookshot across, one with each camera. Whether you roll forwards or not determines where the camera goes on the hookshot across.
