4 boneless skinless chicken thighs (or breasts)
Salt & pepper, to taste
1 tsp smoked paprika
1 tbsp olive oil
1 tbsp butter
3 cloves garlic, minced
1 cup thickened cream
½ cup chicken stock
⅓ cup sun-dried tomatoes, chopped
½ tsp chili flakes
1 tsp dried thyme (or Italian herbs)
½ cup grated parmesan
Handful of fresh basil (to serve)
Method:
Season chicken with salt, pepper, and paprika.
Sear in olive oil over medium-high heat until golden brown (3–4 mins per side), remove from pan.
In the same pan, add butter and garlic, sauté for 30 seconds.
Pour in cream, chicken stock, sun-dried tomatoes, chili flakes, and thyme. Simmer for 2 minutes.
Stir in parmesan and return chicken to the pan.
Simmer for 10–12 minutes, until chicken is cooked and sauce is thickened.
Garnish with fresh basil and serve with mashed potatoes or pasta.
