OK, this is just a test of my Aiptek A-HD+ 1080p with its AV in port... fed the output of the Wii into a (rather old Panasonic) VCR and began the recording. Note that it's a little messed up towards the beginning but it clears up after getting into the main game itself.
Needless to say, I actually did pretty well this run (only did the 50cc Mushroom Cup as a test of the device), and actually got triple stars (using Wii Remote + Nunchuck) :)
