Malvani Egg Curry is one of my personal favourite egg curry recipes, and I'm sure it'll become a lunch or dinner staple at your home too. Packed with the bold, comforting flavours of Malvani cuisine, this curry tastes absolutely incredible with rice bhakri. And if you can get your hands on some sticky Indrayani rice, you're in for one of the most comforting meals you'll ever have.

Malvani Egg Curry
Prep Time: 15 minutes
Cooking Time: 30–35 minutes
Serving: 3–4
Ingredients:
Paste
ONION | प्याज़ 2 MEDIUM SIZED (SLICED)
GARLIC | लहसुन 15 CLOVES
GINGER | अदरक 1 INCH
FRESH COCONUT | ताज़ा नारियल 1 CUP (GRATED)
BLACK PEPPERCORNS | साबुत काली मिर्च 1/2 TSP
CORIANDER SEEDS | साबुत धनिया 1/2 TBSP
CINNAMON | दालचीनी 1/2 INCH
CLOVES | लौंग 2 NOS.
OIL | तेल 1 TSP
SALT | नमक A PINCH
WATER | पानी AS REQUIRED
Gravy
OIL | तेल 3–4 TBSP
KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 1 TBSP
MALVANI MASALA | मालवणी मसाला 1.5 TBSP
HOT WATER | गरम पानी AS REQUIRED
SALT | नमक TO TASTE
Finish
BOILED EGGS | उबले अंडे 6–8 NOS.
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
Method:
Place a kadhai on high flame and let it get hot. Add the sliced onions and cook them on high flame, stirring as you go, until they start picking up colour.
Once the colour begins to develop, add the garlic, ginger, grated coconut, and a pinch of salt. Mix well and continue cooking until the coconut turns golden brown.
Once the coconut has a little colour on it, make a small well in the centre of the kadhai. Add a little oil into the well and add the black peppercorns, coriander seeds, cinnamon, and cloves directly into it. Mix everything together and roast until all the spices are toasted through. Do not let them burn.
Transfer everything to a bowl and let it cool completely. Once cold, add it to a mixer jar with a little water and blend into a fine, smooth paste. Set aside.
Heat a kadhai on high flame and add oil and let it get hot.
Add the kashmiri red chilli powder and Malvani masala and give it a quick stir.
Add the prepared coconut masala paste and cook on high flame, stirring continuously, until the oil separates completely.
Once the oil has separated, add hot water to bring it to a gravy consistency.
Bring it to a full boil, then let it simmer for 6–7 minutes. You will see the oil rising beautifully on top and the consistency will look rich and smooth.
Taste and adjust salt once the gravy reaches your desired consistency.
Take the boiled eggs and poke them all over with a knife so the gravy can seep in. Add them to the gravy and mix gently.
Add fresh coriander and stir through.
Your Malvani Egg Curry is ready. Serve hot with rice, bhakri, or vade.
