Atomic Shrimp | Making Pickle Using a Glut of Home Grown Vegetables (It'll Be Ready For Christmas) @AtomicShrimp | Uploaded August 2023 | Updated October 2024, 2 days ago.
The vegetable garden here at Shrimp Cottage has been really productive so today I want to make some pickle, which will be ready for Christmas.

This is more or less the same recipe framework as my Odds & Ends pickle here: youtu.be/rcG0Rxh8xWU
(just using different fruits and vegetables this time).

This batch comprises:
150g Onion
334g Runner Beans
210g Peppers
590g Courgettes
600g Tomatoes
289g Elderberries
300g Prunes

300g Sugar
500ml Malt vinegar
2 Teaspoons allspice
1 Teaspoon Mixed spice/pudding spice
1 Teaspoon salt

The vegetables and fruits are finely chopped and simmered with the vinegar, sugar and spices. The elderberries are added about 15 minutes before the end of simmering - long enough to cook them fully without completely destroying them.

This style of pickle will work with a wide variety of different fruits and vegetables.
