I am cutting peppers this morning and making homemade "tabasco" sauce. Traditional you would use a tabasco chili pepper but you can also use any other kind of pepper. I tend to like mine alittle milder than tabasco. We will ferment the pepper mash for 1 month to let the peppers render thier juice to make the sauce.
