It's been a week of projects around the home here! We got our yard done, worked around the house and in the kitchen, come along!
~ Rhubarb Syrup
4 cups chopped rhubarb
1 cup sugar
1 cup water
Combine the rhubarb, sugar, and water in a pot and bring to a boil. Lower the heat to a simmer and cook gently, stirring occasionally, until the fruit is soft and the liquid has thickened slightly, about 20 minutes.
Set a fine-mesh strainer (or a coarse strainer lined with cheesecloth) over a large bowl. Pour the rhubarb through the strainer until most of the liquid is in the bowl. Press the solids a little with the back of a spoon to extract more syrup.
Carefully pour the syrup into a clean bottle. Cover or cork the bottle and refrigerate. It should keep for quite some time in the fridge.

(The thing I like about this recipe -other than the flavor- is that it's very flexible, a little more or less of one ingredient doesn't really matter.)
INGREDIENTS:
¼ cup olive oil
¼ onion
2 cloves garlic, minced
2 large carrots peeled and diced
3 ½ cups tomatoes, peeled and seeded
½ green pepper
½ jalapeno or 1 tsp red pepper flakes
1 ½ tsp sugar
½ tsp salt
½ tsp black pepper
½ tsp dried oregano
½ tsp dried basil
In a medium pot, heat the olive oil over medium heat. Add the onions, garlic and carrots and cook for 4-5 minutes, stirring occasionally.
Add the rest of the ingredients to the pot, reduce the heat to low and simmer, uncovered, until thicker. Stirring occasionally.
Let cool slightly and then blend. I like to freeze mine.
