Ingredients
Dumplings
1 pound ground pork
3 green onions, thinly sliced
1 tablespoon soy sauce
2 teaspoons sesame oil
1 tablespoon garlic paste
2 teaspoons ginger paste
1 teaspoon white pepper
20 to 24 wonton wrappers
1 tablespoon avocado oil
1/2 cup water, for steaming
Chili oil, for garnish
Sliced green onions, for garnish
Dipping Sauce
1/4 cup soy sauce
1 tablespoon rice wine vinegar
1 teaspoon sesame oil
1 teaspoon chili oil
1 teaspoon sesame seeds
1 tablespoon sliced green onions
1 teaspoon sugar or honey
Pinch of white pepper
Directions
1. In a large bowl, combine the ground pork, green onions, soy sauce, sesame oil, garlic paste, ginger paste, and white pepper. Mix until just combined, being careful not to overwork the meat.
2. Divide the mixture into 20 to 24 equal portions and roll each into a meatball.
3. In a small bowl, whisk together all of the dipping sauce ingredients. Set aside while the dumplings cook.
4. Preheat the Blackstone Griddle on low heat for 5 to 10 minutes. Lightly oil the cooking surface with the avocado oil.
5. Place the meatballs on the griddle and cook for about 3 minutes.
6. Flip each meatball, then place a wonton wrapper over the top of each one. Pour the water around the dumplings and immediately cover with a melting dome.
7. Steam for 7 minutes. If the water evaporates before the dumplings are fully cooked, add a little more water and continue steaming for another 3 to 4 minutes, or until the pork reaches an internal temperature of 160°F.
8. The wrappers should be tender with lightly crisped bottoms. Garnish with sliced green onions and a drizzle of chili oil, then serve immediately with the dipping sauce.
