The best cast on for most projects is the Long Tail Cast On. It's a little tricky at first, but once you get the hang of it, it's pretty easy to do. The most important thing to remember, is to leave a long enough tail for the number of stitches you need to cast on. The best way to figure this out for your personal style, is to practice - leave a tail the length of your hand to your elbow and see how many stitches you're able to cast on from there. Once you know how many that makes, you can adjust the length for your projects.
