I did a bunch of DPS tests and came out to Lizalfos 3 as a clear winner for damage, so long as you lock on and spam it. This is more damage than Lynels and almost as much as Level 3 swordfighter form.
Close second is Darknut Lvl 3, which is a great alternative for situations where you can't spam. The spin attack has really nice DPS (seems to be same damage per hit but slower hits) and he hyperarmors through most attacks. Using either one of these is a great way to easily beat the last Sleep training, and most things in general.
