I looked on the wiki after this vid:
Nice shot is apparently when you have a spell circle in the shot.
Two shot just means you got both the self-shot and the boss-shot. I just didn't understand why something like it would exist if you had both the self-shot and the boss-shot but I guess it's an extra reward for getting them both.
