This is one of my NEW favorite go-to lunches because of how easy and delicious it is! It's a super bonus that it's a vegetarian meal too. On days where I want a lighter lunch and don't feel like turning on the stove, I do the same thing but put it on top of sliced french bread. It tastes just as good! I hope you guys try this and love it as much as I do.
