These classic Italian Lemon Ricotta Cookies are perfect for the holidays. No one can resist these little pillows of heavenly deliciousness. If you have never had one do not let the ricotta scare you away. Ricotta is just cream cheese without the heavy cream added at the end. These are amazing, light and addictive. This recipe makes about 5 dozen but that will not seem like enough once you taste them. Luckily, they are pretty easy to make so the next batch is not far away. Enjoy!
Italian Lemon ricotta Cookies Recipe
1 cup (2 sticks) Butter, room temp
4 cup AP Flour
2 cups Granulated Sugar
15oz Ricotta Cheese
3 Eggs
2 tbsp Fresh Lemon Juice
1 tsp Baking Powder
1/2 tsp Baking Soda
2 tsp Vanilla Extract
1 tsp Salt
Icing Recipe
1/4 cup Butter, Melted
4 cups Powdered Sugar
1 tsp Almond Extract
4-6 tbsp Milk
2 tbsp Fresh lemon Juice
Colored Sprinkles of your choice
