We made a ton of mashed potatoes for a family dinner and still had more left AFTER eating them for leftovers. We knew they would go to waste unless there was a way to re-make them so we tried this recipe and it was a huge hit! Not a scrap was left, you should give it a try.

Leftover Mashed Potato Cheese Puffs
- 2 C leftover mashed potatoes
- 1/2 C flour
- 1 1/2 C cheese
- 2 tsp chives
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp pepper
- 1 egg

Bake @ 400F for 18-24 min or until tops are golden & puffed. Let cool for 5 min.
