Lentil Chili Recipe:
2 Yellow Onions, Finely Diced
2 Cloves Garlic, minced
1 tsp Ground Coriander
1 tsp Ground Cumin
2 tsp Tumeric
1/2 tsp Ground Cinnamon
6 Cups Vegetable Broth
1 28oz Can Crushed Tomatoes
2 tbsp Tomato Paste
1 1/2 Cups Dried Red Lentils
Salt and Pepper
1/2 Lemon, Juiced
1/4 Cup Fresh Parsley, Finely Chopped
Combine all of the ingredients in your slow cooker. Stir well. Turn it on high and allow to cook for 3-4 hours. Serve immediately or store in refrigerator for up to five days. Freeze for up to four months.
