Today I'm sharing two family recipes--my Aunt Dorothy's Candied Pecans and my mom's Fete Fudge. Merry Christmas!
CANDIED PECANS (full recipe)
48 oz. pecan halves
6 egg whites
2 cups sugar
2 tsp. cinnamon
1 tsp. salt
2 Tbsp. water
Preheat oven to 225*F. In a large mixing bowl, beat the egg whites until soft peaks form. Add the nuts, sugar, cinnamon, salt, and water. Gently fold the mixture together until all the nuts are coated. Pour the pecans evenly onto 2 baking sheets that have been lined with non-stick foil or regular foil that has been sprayed very well with baking spray (this will make cleanup SO much easier!). Bake at 225*F for 1 hour, stirring the nuts every 15 minutes. Allow to cool completely. Store in an airtight container. These can be frozen to use year round.
FETE FUDGE (full recipe)
4 ½ cups of sugar
pinch of salt
12 oz. can evaporated milk
2 Tbsp. butter
8 oz. German baking chocolate (48% cacao), broken into chunks
12 oz. semi-sweet chocolate chips
7 oz. marshmallow fluff
Bring the sugar, salt, evaporated milk, and butter to a boil. Boil for 6 minutes, stirring frequently to prevent burning. Place baking chocolate, semi-sweet chocolate, and marshmallow fluff into a large mixing bowl (preferably heat proof). Carefully pour the boiling liquid over the chocolate and marshmallow and immediately begin to beat with an electric mixer until the chocolate is melted and all ingredients are incorporated. Pour into a buttered, 13 x 9 in. baking dish. Refrigerate until set. Slices best at room temperature. ENJOY!
