On September 1, 2026, the Lansing Village Board entertained a proposal from the Salazar family for a new ice cream shop on Ridge Road, the main business corridor in downtown Lansing, Illinois. Village Administrator Dan Podgorski introduced the Salazar family to the board, and brother and sister Nicolas and Alisson shared their business plan. Members of the board followed up with questions and discussion.
