A friend of mine recently complained that all the Keto Diet recipes he's seeing combine milk and meat, which he is unwilling to do in his kosher home.
While I do not personally advise any particular diet, here's a one-pot meat dinner that is kosher-friendly, dairy free, and keto-friendly (simply omit the tomato paste, if you wish). It's mild enough for the children to enjoy and fast enough to pull off on a weeknight. It also rewarms great as leftovers or freezes well to enjoy another day. Can't get any better than that!

Note: in my version, i double the meat, using dark meat chicken, and triple the spice rub (do not triple the salt...add more salt as needed). Tomato paste or ketchup can be used if you are not on a keto diet, or you may omit. I use one can of coconut milk and water to taste.
