I am so excited to cook, chat, do some kitchen witchery and hang out with you all! And I have finally decided on a dish, that can work for most people, and is easy to adjust for any dietary restrictions(*1): a delicious LASAGNE - completely made from scratch.

Here are the ingredients and measurements you will need for this delicious & fresh dish. Be sure to look up all 4 components for your version: dough, filling, béchamel and topping - also, I promise, it is easier than it sounds!
1. For the dough (STANDARD & VEGETARIAN)*(2)
400 g all-purpose flour
4 Eggs
salt
1. For the "dough" (VEGAN)*(2)
3 Aubergines
some (Coarse) salt
Some vegetable Oil
2. For the filling (STANDARD)
500 g Minced meat (beef or pork/beef mix)
1 can peeled (or diced) tomato
2 TBSP Tomato purée
3 Carrots
2 Celery sticks
1 Onion
2 Garlic cloves
1 cup red wine (optional)
2. For the filling (VEG & VEGAN)
1 can peeled (or diced) tomato
2 TBS Tomato purée
3 Carrots
2 Celery sticks
1 Onion
2 Garlic cloves
1 cup red wine (optional)
500 g Mushrooms
1 Bell pepper
1 Zucchini
Oil for frying
3. For the béchamel (STANDARD & VEGETARIAN)
0.5 l Milk
3 TBSP Butter
2 TBSP Flour
3. For the béchamel (VEGAN)
3 TBSP Olive Oil
3 Tbsp all-purpose Flour
2 Cups Soy Milk (or other non-dairy milk)
4. For the topping (STANDARD & VEGETARIAN):
1 Mozzarella
some parmesan
4. For the topping (VEGAN):
some vegan Parmesan
Spices recommended (but not necessary):
Pepper
Salt
Nutmeg
Sugar
A squeeze of fresh lemon juice
Cinnamon
Oregano
Fresh basil (for garnish)
