Whole Chinese Red Snapper video recipe
Ingredients:
Fresh whole red snapper: about 1 pound (to serve 2)
Fresh garlic (6 cloves, minced)
Fresh ginger (optional, 1 or 2 thumbs, peeled and minced)
Canola oil (~3 tablespoons)
Soy sauce (~1 1/2 tablespoons)
Fish sauce (~1/2 tablespoon)
Oyster sauce (~1 1/2 tablespoons)
Rice vinegar (~1 tablespoon)
Honey (~2 teaspoons)
Chili garlic sauce (optional, ~1 or 2 heaping tablespoons)
Water (~1/3 cup)
White wine (optional, ~1/4 cup, otherwise use water)
Scallions (3, sliced whites and greens)
Fesh cilantro leaves (~1/4 cup, whole or coarsely chopped)
Sticky rice, cooked (2 servings, e.g. Calrose)
Optional:
Star anise (1-4 pieces)
Fresh pea pods (2 servings worth)
Carrots (2 servings worth)
Sesame oil (optional, ~1 teaspoon)
Sesame seeds, toasted (optional, ~1 teaspoon)
Cook this whole fish a minimum of about 5 minutes per side, plus perhaps 3-5 minutes more while sauce is reducing, during which you should flip the fish once again so that each side has equal time against the hot pan.
Cover the pan while cooking to speed cooking or if you have a more substantial fish.
Test whether the meat pulls easily away from bones with a fork to determine if it's done.
