One of the most common and often embarrassing experiences for Koreans or Korean expats living abroad often involves kimchi. We often hear stories of kimchi leaking out of a bag while traveling, a roommate complaining about the smell of kimchi in a shared fridge, or packing kimchi for lunch and getting stares from other students at the school cafeteria. Despite being one of Korea’s most iconic soul foods, kimchi had often been derided as something unsavory in other countries in years past. Recently however, more and more people outside of Korea are starting to appreciate Korea’s national dish.
In this week’s edition of the Globalists, we sit down with Ahn Tae-yang, CEO of Food Culture Lab, who’s best know for creating a kimchi seasoning that’s been a steady bestseller on Amazon. She shares her story on how she managed to change people’s perception of kimchi and her thoughts on how kimchi can become a truly global dish in response to the increasing popularity Korean cuisine worldwide.
