Easy Keto Enchiladas
1 pound ground beef
8-12 slices chicken or turkey lunch meat
Jar of Siete Red Enchilada Sauce
1 cup Colby jack cheese
1. Preheat your oven to 375 degrees F
2. Spoon about 1/4 of your enchilada sauce on the bottom of your casserole dish to help prevent sticking.
3. Lay out individual slices of lunch meat.
4. Spoon some of the cooked ground beef onto each slice of lunch meat and roll it like a cigar. Place each roll seam-side down in your casserole dish (or you can also use a loaf pan). (The amount of filling will depend on the size of your lunch meat.)
5. Do this for all the lunch meat slices until you have a full casserole dish. Add any extra meat directly on top of the rolled enchiladas.
6. Cover the entire dish with the remainder of the enchilada sauce. Then add cheese to the top.
7. Cook for 15 minutes, until the cheese is nice and melted!
