Here’s the recipe I love for homemade keto jerky (also low-sulfur/thiol).
- 625g top round beef, cut into thin strips
- 25ml acv
- 2 tbsp water
- 2 tsp salt
- 1/2 tsp paprika
- 1/2 tsp pepper
- 1/4 tsp ginger
- 1 tbsp Swerve confectioner’s sweetener
- 1/2 tsp liquid smoke
Mix up everything and marinate the strips of beef in the fridge overnight. Space the strips flat and apart on a dehydration rack that fits your air fryer. Pasteurize (kill any bad bacteria) at 300º F for 8 minutes, then set to dehydrate mode at 150º for about an hour and a half.
Check the consistency of your jerky. The pieces should kind of bend but also crack. Some pieces might be done but probably you’ll need to redistribute others and dehydrate a little longer.
You can include onion powder and garlic powder, but that would add sulfur/thiols for those who don’t mind.
