Kashiwa Daisuke is one one of my favorite 'hipster' composers that you have probably never heard about.
He is generally known for his electronic music, which you could describe as a mix of glitch/ambient/jazz/instrumental music (though honestly all of his albums are so different from each other it hard to label him under any specific genre). He likes utilising piano in his work and his albums even contain occasional piano solo pieces such as this one.
Here's one of three piano pieces from his album Program Music 2. I would say this album is the least 'out there' in a sense that it contains fairly harmonically simple instrumental music as opposed to his other more experimental work. Very calm and soothing song, hope you enjoy:)
