Cake with bottom of crumbled ginger cookies (200g) mixed with melted butter (60g). Left in fridge for 30mins. Top is a mix of mascarpone (500g) and 2 rasped and squeezed limes. Rasped chocolate on top. Everything in fridge for another 30mins
