Yay! I'm finally making meals from my garden again. This is a gorgeous hot salad for lunch....or, double the portion for supper. It's just 268 calories of yumminess. Simple ingredients (lentils, beans, greens and tomatoes), a fairly quick cook.....and a bowl full of health and comfort (especially on days like today when I seem to be a bit ill).
