In Good Taste: Shrimp and Grits with Carey Fagan  @singaporeusembassy

A humble dish with Native Americans roots, did you know that Shrimp & Grits has been named by the state of Georgia as its official prepared food?

In the third episode of our food diplomacy video series, Carey Fagan, Director of the Federal Aviation Administration, Asia-Pacific Region, shares her state food with Singaporean food blogger Maureen Ow a.k.a. Miss Tam Chiak.

Shrimp and Grits Recipe
Ingredients:

GRITS:

1 cup stone ground grits
Salt and pepper to taste
Butter
1 ½ cups shredded Cheddar cheese
3 ½ cups water

Bring the water to a boil. Add the grits to the pan, stirring as you add. Add salt and pepper to your taste. Once the grits begin to boil again, turn to simmer for 15-20 minutes or until softened. During the last 5 minutes, add the shredded cheese.

SHRIMP MIXTURE:

1 ½ lbs medium size shrimp, cleaned and deveined
1 green pepper, sliced lengthwise
1 onion, chopped
2-3 cloves of garlic, minced
Tomatoes, quartered or chopped depending on size
Hot sauce to taste
1 teaspoon Lemon juice
Olive oil
Cilantro or parsley for garnish

Heat the olive oil. Add garlic and onions and sauté until tender. Then add green peppers and cook until just softened. Sprinkle hot sauce and lemon juice to mixture. Add shrimp and tomatoes and cook 2-3 minutes until shrimp are pink.

Spoon the grits into a bowl and top with shrimp mixture. Finish with cilantro or parsley for garnish. Makes 4 servings.
