*I reduced the liquid to 1/2 cup and increased the oil to 3 tbsp to make "stacks" instead. There was a good amount of leftover marinade, so I actually think you could double the sweet potatoes and make 2 muffin trays worth instead! I baked mine in the oven at for 30-35 min.
