Baklava Protein Bites
Yield: About 10–12 bites
Prep time: 15 minutes
Ingredients
¾ cup walnuts
½ cup old-fashioned rolled oats
3 Tbsp vanilla protein powder
¼ cup almond butter
3 Tbsp honey
1 tsp cinnamon
¼ tsp ground cardamom or ground cloves
Pinch of salt
Ground pistachios, for rolling
Instructions
Add the walnuts and oats to a food processor. Pulse several times until finely chopped, but don't process them into a flour. Add the rest of the ingredients, and pulse until the mixture comes together. It should be sticky enough to hold its shape when pressed. If the mixture seems too dry, add another teaspoon of honey or almond butter, if too wet, add more oats. Scoop out approximately 1 tablespoon of the mixture and roll into balls. Roll each bite in finely ground pistachios.

Halawa-Inspired Tahini Protein Bites
Yield: About 10–12 bites
Prep time: 10 minutes
Ingredients
½ cup old-fashioned rolled oats
¼ cup vanilla protein powder
2 Tbsp grape molasses or honey, plus more to taste
¼ cup peanut butter or another nut/seed butter
¼ cup tahini
1 tsp cinnamon
Pinch of salt
Toasted sesame seeds, for rolling
Add the oats and protein powder to a bowl. Stir in the tahini, peanut butter, grape molasses or honey, cinnamon and salt. Mix thoroughly until a soft, sticky dough forms. If the mixture is too dry, add a little more honey or grape molasses. If it's too sticky, add a tablespoon of oats. You can refrigerate the mixture for about 15–20 minutes to make make it easier to roll. Scoop out approximately 1 tablespoon at a time and roll into balls. Roll each bite in toasted sesame seeds.

Qamar Al Din Apricot Coconut Bites
Yield: About 12 bites
Prep time: 15 minutes
Ingredients
1¼ cups dried apricots
¼ cup almond butter
1 tsp orange blossom water
½ cup almond flour or almond meal
¼ cup unsweetened shredded coconut
3 Tbsp vanilla protein powder
¼ cup pistachios
Additional pistachios and coconut, for rolling
Instructions
Boil water in a saucepan, and turn off the heat. Place the dried apricots the water for about 5 minutes and drain and pat the apricots dry. Add the apricots and almond butter to a food processor and pulse until they form a thick paste. Add the orange blossom water, almond flour, coconut, protein powder and pistachios. Pulse until the ingredients form a dough. Scoop out about 1 tablespoon at a time and roll into balls. Roll in a mixture of finely chopped pistachios and coconut.

Turkish Mocha Bites
Yield: About 12 bites
Prep time: 15 minutes
Ingredients
12 pitted Medjool dates
½ cup sunflower seed butter or cashew butter
1 tsp vanilla extract
1 tsp ground cardamom
1 tsp finely ground Turkish coffee
Pinch of salt
2 Tbsp unsweetened cocoa powder
¼ cup chocolate protein powder
Ground peanuts or cashews, for rolling
Instructions
Add the pitted Medjool dates and nut butter to a food processor and pulse until they form a thick, sticky paste. Then add the rest of the ingredients and process until the mixture comes together and is sticky enough to roll. If it seems too dry, add another date or a teaspoon of nut/seed butter. Scoop out approximately 1 tablespoon of the mixture and roll between your palms to form a ball. Roll each bite in finely ground peanuts or cashews.
