Do you know the Verte Chaud? The delightful Après-Ski drink is new to me, and if you haven’t tried it you should. Despite how easy it is easy to make, I found a way to complicate it, with the (unsolicited) help from my pal Uncle Pete.
Pete recently made a video on what may be a new drink category—the Amaro Latte, which is made my combining amaro and milk in an electric frother. Check out his video on the subject here:

Lazy Verte Chaud (adapted from a recipe by Jamie Boudreau)
1oz/30ml Green Chartreuse
3oz/90ml whole milk
1tbs unsweetened cocoa powder
Uncle Pete’s Mistake
2oz/60ml Green Chartreuse
6oz/180ml whole milk
1tbs unsweetened cocoa powder (but next time I’m using 2tbs)
1 egg
Lastly, one thing I like about Uncle Pete’s style is how he puts his own touch on the drinks he makes in his videos. Wouldn’t be great if he made a Let Me Fix That For You video of this drink?

![CAMPARI AND SALT?!—A Rogue Cocktail
This martini isn’t really a martini at all. Brilliant in its simplicity, the Campari Martini marries the immortal, jewel red bitter with that most common of additives—salt.
From Molecular Gastronomy: [Salt] increases the ionic strength of aqueous solutions, making it easier for odorant molecules to separate themselves from food. This is why unsalted soup has no flavor and why adding salt amplifies its odor, which is an important part of flavor.”
Beta Cocktails was compiled by Kirk Estopinal and Maksym Pazuniak. Reprints can be ordered here:

I’ve never met Kirk or Maks but hope to someday. Their stance of reimagining the classic cocktail into something bold and adventurous has had an indelible effect on how I approach drink making. Guys, if you’re reading this, thank you!
Campari Martini by Maksym Pazuniak
3oz/90ml Campari
3-5 drops saline solution (I prefer 5)
