Tonight I’m making a rich, creamy, cheesy Chicken Spaghetti that is pure comfort food in a casserole dish! 🍝✨

I used The Pioneer Woman's Chicken Spaghetti recipe as inspiration, but I added my own little spin along the way. This easy dinner recipe is hearty, budget-friendly, Keith-approved, and perfect for busy weeknights or Sunday supper.

If you love cozy Southern-style meals, simple comfort food recipes, and easy dinners made with everyday ingredients, this one is definitely worth trying!

PIONEER WOMAN CHICKEN SPAGHETTI RECIPE
Ingredients
o 2 cups cooked chicken, shredded
o 8 oz spaghetti, cooked and drained
o 1 can (10.5 oz) cream of chicken soup
o 1 can (10.5 oz) cream of mushroom soup
o 1 cup sour cream
o 1 cup chicken broth
o 1 cup cheddar cheese, shredded
o 1 cup Monterey Jack cheese, shredded
o 1 small onion, chopped
o 1 green bell pepper, chopped
o 2 cloves garlic, minced
o 1 tsp salt
o 1/2 tsp black pepper
o 1/2 tsp paprika
o 2 tbsp butter
o 1 cup breadcrumbs (optional)
Instructions
1. Cook the spaghetti
Boil spaghetti in salted water. Cook until just soft. Drain and set aside.
2. Sauté vegetables
In a skillet, melt butter. Add onion, pepper and garlic. Cook until soft.
3. Make the sauce
Add soups, sour cream and broth to the skillet. Stir well until smooth.
4. Add spices and chicken
Add salt, pepper and paprika. Mix in shredded chicken.
5. Mix pasta and sauce
Add cooked spaghetti to the sauce. Stir until fully coated.
6. Add cheese
Mix in cheddar and Monterey Jack. Stir until melted.
7. Bake the casserole
Pour mixture into a baking dish. Sprinkle breadcrumbs on top.
8. Bake until bubbly
Bake at 350°F for 20 minutes. Bake until cheese is bubbly.
