🍒 Dark Chocolate Sour Cherry Cookies
Ingredients:
1 cup unsalted butter, at room temperature
1 cup granulated sugar
1 cup brown sugar, packed
2 large eggs, at room temperature
2 tsp vanilla extract
2 cups all-purpose flour
1 cup cake flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
3 cups high-quality dark chocolate chips
1/2 cup chopped dark chocolate chunks
1/2 cup chopped dried sour cherries
Flaky sea salt, for sprinkling on top
Instructions:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the all-purpose flour, cake flour, baking powder, baking soda, and salt.
Add the dry ingredients to the wet mixture and stir until just combined.
Fold in the dark chocolate chips, chopped dark chocolate chunks, and chopped dried sour cherries.
Using a cookie scoop or spoon, drop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
Sprinkle a pinch of flaky sea salt on top of each cookie.
Bake the cookies for 12-15 minutes, or until they are golden brown around the edges and set in the middle.
Remove the cookies from the oven and let them cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.
