Water picked a mix of tourist chains, local favorites, and mom-and-pop shops across China's stinky tofu capital. Over two rainy days, we rated black tofu, white tofu, a restaurant with a decades-old fermentation vat, and one final plate inside Changsha's massive Wenheyou food complex.
