Lets make a traditional Absinthe Le Blue from the early 1900's. The world tried to squash absinthe, but the moonshiners from the Swiss Alps kept the tradition alive by distilling clear Absinthe.

Recipe:
2L (0.53 gal) of 170 proof / 85% spirit (ideally made from sugar beets)

58g Wormwood
69g Anise
79g Fennel
16g Star Anise
8g Hyssop
11g Lemon Balm
6g Peppermint
2g Liquorice root
1g Angelica Root (you may want to halve this)

Heat the spirit to 140f / 60c with the botanicals. Hold it near that temp for 1 hour, then let it sit for another 24 hours.

Proof the spirit down bellow 40% abv with 2.4 l (0.63 gal) of water. Split the batch if your still requires.

Pot distill removing a small amount of spirit from the begining untill the botanicals taste better. Collecct hearts down to around 60% or when it starts to loose flavour.

Reserve the next part of the run to re-distill and reclaim alcohol.

Once the tails start to go cloudy reserve them to put back into the next absinthe spirit distillation.

Proof the spirit down to 60% abv and bottle

Enjoy neat, or louche down to 25-25% abv with ice cold water.
