Can you really make delicious homemade pumpkin bread with pumpkin that’s been sitting in the freezer? Absolutely! I had some leftover pumpkin that I froze after making pumpkin creamer, so instead of letting it go to waste, I pulled it out and turned it into this easy homemade pumpkin bread.
This is a from-scratch recipe, but don’t let the ingredient list fool you—it’s still super easy and quick to put together. Most of the ingredients simply go into the mixing bowl, and a handful of chocolate chips makes it even better. The result is a moist, delicious pumpkin bread that’s perfect for fall, breakfast, dessert or an easy snack.
It’s also a great reminder that leftover pumpkin puree doesn’t have to go to waste. Freeze it and save it for pumpkin bread later!
You can find this pumpkin bread recipe in our Dining On A Dime Cookbook Volume 1.
