A year ago, I traveled to Bordeaux, France, where I tried what many chefs consider one of the most finicky pastries in French baking – the cannelé. At its core, it seems simple: a custard-like batter poured into molds and baked until dark. Easy right? Nah. The devil is in the details. A proper cannelé should have a deeply caramelized, almost black crust that shatters slightly when bitten into, revealing a soft, custardy interior fragrant with vanilla and rum.
