Baldurian Mash
3lbs baby potatoes, cut into bite sized pieces
5 whole carrots, chopped
Frozen sweet peas, half a bag
Olive oil, a lot
1 egg, fried
1 teaspoon fresh rosemary
1 teaspoon fresh thyme
1 tablespoon onion powder
1 teaspoon coriander powder
2 tablespoons garlic powder
1 teaspoon smoked paprika
Salt and pepper
3 roma tomatoes, diced (optional garnish)
3 sprigs of green onion , diced (optional garnish)
Step 1:
Prepare your taters by chopping into bite sized pieces. Add to a large bowl and coat with 1-2 tablespoons olive oil, a generous pinch of kosher salt and a few cracks of fresh black pepper. Spread the potates evenly on a foil lined baking sheet. Preheat your oven to 350F or 180C and repeat this process for the carrots as well. If you're roasting tomatoes for garnish, I would recommend dicing and adding to a third separate pan.
Step 2:
Roast the potatoes and carrots in the oven for 25-30 minutes, but be sure to pull the carrots out at 17 minutes to add your bag of sweet peas.
(The tomatoes should be done by this time, but don't pull them until they've got a bit of color.)
When everything is fork tender, remove the veggies and leave the potatoes. Turn your oven to the broil setting and and set your potatoes on the top rack of the oven. KEEP A CLOSE EYE ON THEM SO THEY DONT BURN. After about a minute, shuffle the potatoes around the ensure even crisping.
After 2 minutes or so, they should be ready to come out.
Step 3:
We need to add the seasonings while the potatoes are still hot.
To the same large bowl from earlier, add all your seasonings including another small dose of salt and pepper. Toss to coat. Try not to immediately eat these even though they smell amazing.
With a mashing tool or fork, mash the peas and correct to a consistency you like, and season with salt and pepper.
Step 4:
Fry your egg first. It should only take a minute or so.
To plate, start with a bed of veggies, a heap of potatoes, if using tomatoes sprinkle some on top of the potatoes, add your fried egg and garnish with spring onion.
