This is an optical illusion. The "white" color isn't actually there - if you pause the video while it's spinning, you'll see that the camera picked up the right colors. The information was moving so quickly that your eyes saw it as white.
Btw, if you're viewing this at less than max quality and 60fps you won't see it - lower frame rates mean your eye has time to catch the individual frames.
