There is a workaround to play Pokemon Let's Go Eevee and Pokemon Let's Go Pikachu on the Yuzu Nintendo Switch Emulator!

UPDATE: You do NOT need a save file! You can start the game and then you can make your own save file! Check my setup guide here:
