WASSAIL! Okay, y'all. Starting at about Thanksgiving (end of November, for those not in the States) and lasting through about Hogmany (end of january, for those of you who are in the states) is all a period that I just like to think of as wassail season.

The recipe I use is a family recipe which we were taught at some point back by a family friend, so it's probably more rightly their family recipe. However every household in my greater extended family makes it basically the same way. And it is not the holiday season without it.

What I use:
- 40 cup coffee percolator
- 1 gallon of apple cider, usually -- when I recorded this video, it was not cider season though, so I used a gallon of apple juice which also works well
- Six cinnamon sticks
- One cup of regular brown sugar -- or a half cup of sucralose brown sugar (which is the type of brown sugar that my husband and I usually keep in our home)
- whole cloves (about half a teaspoon or until my ancestors tell me to stop)
-whole allspice (about one and a half teaspoons, or until my ancestors tell me to stop)

I add a little extra water to the juice or cider so that it reaches the max fill line.

Brew and enjoy!

Additional note: apple cider in the states is not the alcoholic beverage. We call that hard cider. What we call Apple cider, you all might call unfiltered apple juice, maybe?

An extra additional note: my family doesn't add alcohol to the wassail pot, but adding a little rum or Bärenjaeger (a honey liqueur) to your cup of hot wassail is frankly amazing.
