Ingredients:
2 pounds boneless skinless chicken thighs (or chicken breast)
1/2 cup BBQ sauce
4 slices of bacon
1/2 cup jarred roasted red pepper
1 cup shredded Monterey Jack cheese
Optional – 1 green onion (diced)
