RECIPE:
FOR THE FILLING: (blueberry jam + whipped cream)
Ingredients for blueberry jam:
1 cup blueberries
¼ cup sugar
1 teaspoon lemon juice
Directions:
Combine all ingredients and cook in a small saucepan until desired consistency is reached.
Set in the fridge and allow to cool.
Ingredients for whipped cream:
Heavy whipping cream
Sugar, to desired sweetness
Directions:
Combine and whipped ingredients together until desired consistency.
Fill a piping bag, then set in the fridge until ready for use.
FOR THE DETAILS (Majellan’s mouth/eyes):
Ingredients for royal icing:
Meringue powder
Food coloring
Directions:
Follow royal icing directions as merengue packaging.
You want consistency that of honey
Make as many needed to fulfill different colors of majellan’s details.
Allow to cure in room temp until hardened.
FOR THE MOCHI:
Ingredients:
130g mochiko flour (we tried and tested other glutinous rice flours,but this is by far our favorite for this recipe in terms of texture)
30g corn starch
45g sugar
220ml cold milk
20g cold butter (optional)
Food coloring
Directions:
Combine flour, corn starch, and sugar.
Incorporate milk, strain mixture, and pour into a heat safe container in preparation for steaming.
Seal container with saran wrap, make several punctures on top, and steam for 20 minutes.
Remove the mochi from heat, transfer to a slightly greased, large bowl for mixing,
Mix, then incorporate food coloring.
Add in butter, and mix well.
*tip: we added in butter so that it’s easier and less sticky to work with. Also adds a surprisingly nice taste to the mochi. Feel free to opt out of this part.
Cover well, and set aside until cool to touch.
Lightly dust a surface with corn starch, and roll out mochi with a dusted roller, until about 1” thick.
*tip: keep it light! Too much starch is not good.
We used a dusted cutter for desired shape. Gently place mochi into a tea cup or small sauce bowl, fill with filling, and pinch tightly to close.
Pinch majellan’s signature swirl on top of his head.
