Éclair Recipe
½ cup (1 stick) butter
1 cup water
¼ tsp salt
1 cup flour
4 eggs
Directions
1. Preheat oven to 450 F.
2. Place butter and water in medium saucepan, and bring to a boil over medium-high heat. As soon as mixture comes to a boil, remove from heat and stir in salt and flour until mixture forms a ball
3. Stir in eggs one at a time, working quickly so eggs don’t scramble.
4. Place batter into pastry bag, and pipe out 3” eclairs. Bake at 450F for 15 min, then reduce heat to 325F and bake for an additional 20-25 minutes. Do not underbake!
Pastry Cream
2 packages instant banana cream pudding mix
2 cups heavy cream
1 cup milk
Directions:
1. Stir ingredients together, then place in fridge until ready to use (mixture will thicken).
Note: This is not a “true” pastry cream, but it’s easy, quick, and in my opinion, just as good :-)
Royal Icing
2 egg whites, beaten until foamy
3 cups powdered sugar
1 – 2 T tsp water
¼ tsp cream of tartar (optional)
Directions:
Sift powdered sugar and cream of tartar into a large bowl. Mix in beaten eggs, and whip for 5 min until stiff. Add water until desired consistency is reached.
