Please note that I KNOW this is NOT a "proper" soda bread recipe. It is, however, from a man who is from Ireland. This recipe is from Noel G. Trainor, former general manager, Hilton Hawaiian Village.
5¾ cup Bob's Read Mill bread flour
1⅛ cup granulated sugar
2½ cup buttermilk
2 tsp salt
3 tsp baking powder
3 tsp baking soda
2 eggs
1 cup Challenge Butter
1½ cup raisins
Garnish: melted butter & sugar
Mix softened butter with dry ingredients. Add liquids and mix. Knead dough into a ball, half the dough and deposit into two greased 8-inch cakes pan. Distribute the dough evenly in the pan. Cut an "X" on the top of the dough (to release steam). Brush entire top with melted butter and sprinkle generously with sugar. Allow dough to sit for 10 minutes prior to baking. Bake for 40 minutes in a 350 degree oven. Bread may be served warm or at room temperature
