Full Recipe:

Materials:
9x5 inch loaf pan
Parchment paper (optional)
Mixing bowls (one large, one medium)
Whisk
Spatula
Measuring cups and spoons
Wire rack (for cooling)

Ingredients:
2 cups Himalayan Tartary buckwheat flour
1 cup all-purpose flour (optional, for better texture and rise)
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon sugar or honey (optional)
2 eggs
1 1/2 cups raw kefir
1/4 cup olive oil or melted butter
Steps:

Preheat the oven: Preheat to 350°F (175°C) and grease your 9x5 inch loaf pan or line it with parchment paper.
Mix wet ingredients: Beat 2 eggs, then whisk in 1 1/2 cups raw kefir and 1/4 cup olive oil or melted butter.
Mix dry ingredients: In a large bowl, combine Himalayan Tartary buckwheat flour, all-purpose flour (optional), baking powder, baking soda, salt, and sugar or honey.
Combine ingredients: Pour the wet mixture into the dry ingredients and stir gently until just combined. The batter should be slightly lumpy.
Bake: Pour the batter into your greased pan and bake for 25-55 minutes, depending on your oven. The bread is ready when a toothpick inserted into the center comes out clean.
Cool and serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
