♡ The Recipe ♡
These fairy cakes are perfect when you fancy something sweet but don't want to blow your diet. They contain ingredients that slowly release their energy, so won't leave you with a sugar come down.
Preparation time: 5 minutes
Cooking time: 8-10 minutes
Total time: 15 minutes
Makes 6
Ingredients:
50g peanut butter, smooth or crunchy
1 tablespoon olive oil
50g agave nectar
50g self-raising wholemeal flour
2 eggs
To Top:
30g peanut butter, smooth or crunchy
Method:
Preheat the oven to 180c
Place the peanut butter, olive oil and agave nectar together in a large mixing bowl. Mix together then add the flour, and beat in the eggs. Whisk together for around 1 minute, then divide the mixture equally between 6 bun cases.
Place the bun cases in the oven for 8-10 minutes, once the buns are springy to touch on top, remove the buns from the oven and place on a cooling rack.
Leave the buns for around 10 minutes to cool, then spread the peanut butter on top evenly.
