INGREDIENTS
1½ cup graham cracker crumbs, crushed
5 tbsp butter, melted
8 oz cream cheese, room temperature
1 can sweetened condensed milk
4 egg yolks
½ tsp vanilla extract
1 tbsp strawberry jam
1 tbsp blueberry jam
1 tbsp orange marmalade
1 tbsp lemon curd
1/2 cup heavy whipping cream
2 tbsp sugar
½ tsp vanilla
Gel food coloring (pink, purple, orange, yellow)
4-6 ramekins
INSTRUCTIONS
1. Preheat oven to 375 degrees F. Lightly grease 4 ramekins with non stick spray, canola oil or butter.
2. In a medium bowl, mix graham cracker crumbs and melted butter in a bowl until well combined. Divide into ramekins until evenly distributed. Pack down in the crumbs in the bottom of the ramekins to create crust. Blind bake for 8-10 minutes. Let cool to room temperature. Adjust oven temperature to 350 degrees F.
3. In a medium bowl, beat cream cheese and sweetened condensed milk until combined. Add the yolks, and whisk until smooth. Stir in vanilla extract.
4. Add a tablespoon of different jams or curd to each one. You can make all the same flavor or use any flavor combination. Smooth out a layer of jam/curd around the bottom of the crust.
5. Pour the cream cheese mixture into each of the ramekins on top of the jam.
6. Bake for 20-25 minutes until the center is set. Cool to room temperature before placing in the refrigerator to chill for at least 1 hour.
7. While pies are chilling, make the whipped cream by whipping heavy cream and sugar in a mixer until it reaches stiff peaks. Divide the whipped cream into 4 bowls and color each bowl according to the flavors of each fruit pie.
8. Once fruit pies have cooled, carefully remove pies from ramekins. Pipe a dollop or spoon a dollop of tinted whipped cream onto each of the pies before serving.
