Hi Everyone,
Enjoy this Shabbos recipe! May it sweeten your table with cinnamon and spice!
Wrap 1 large butternut squash in tin foil
Place in baking pan
Bake at 450 for about 3 hours until soft. Press firmly to check if it's ready. ( Like the ripeness of an avocado)
In a food processor or in a bowl, using an electric whisk,:
Mix
Butternut squash
4 eggs
1 tsp vanilla
1/2 cup of sugar (The original recipe is 1/3 cup. I have one daughter who loves that simple low sweet taste and one who puts in MORE than half a cup. Let me know what you do!)
3 shakes cinnamon
1/2 cup oil
In a separate bowl mix
1/2 cup of flour
2 tsp baking powder
pinch of salt
Add the flour mixture slowly into the butternut mixture, one spoon at a time.
Grease 9x 13 pan or 9 inch square pan
Pour in butternut mixture
Top with cinnamon
Optional: Also top with brown sugar
Optional: Top with a hint of salt
