If you are only going to make one salad again in your life, then it needs to be this one! This is an iconic Thai street food dish that packs a chilli kick balanced with the sour, salty and sweet dressing.

I believe that this is a North Eastern Thai dish. It’s an extremely popular street food salad and the street carts can be easily recognised by the piles of shredded green papaya. This is traditionally made using a Thai Krok, a wooden pestle and conical shaped terracotta mortar.

It is often served with green snake beans and cabbage, along with Thai sticky rice. There are often stalls close by selling grilled pork. There are similar salads that use green mango too. In my opinion this is one of the most exciting Thai street food dishes out there. On the surface it appears simplistic but the marriage of textures, tastes and flavours demonstrate just how complex this salad really is.

For the Som Tam, or Thai Green Papaya Salad you will need:

Green unripe papaya
Thai birds eye chillis
Garlic
Fresh lime
Peanuts
Dried shrimp
Palm sugar
Fish sauce

You can start with the amounts I used in the video but this is a salad that you need to own and make yours. Experiment with the quantities and have fun!
